Best print books for Hotel management, Culinary Arts, and Paralegal programs

Hello,
  I have inquired already with the Deans of these academic programs at our small community college, but I also wanted to reach out to other Collection Development Librarians to see if anybody has any resources they use to gather the best print books for Hotel Management, Culinary Arts, and Paralegal programs.

Any help would be greatly appreciated to this relatively new CD Librarian!
