I’m not sure if you’re talking about how subjects are divided or about the work that the liaisons do. I’m at a state library, not an academic one, but we divide liaison duties mostly by state agencies (departments). Our liaison libraries are responsible for collection development in subject areas related to their agencies (we’ve divided up LC by agency, and liaisons cooperate on overlapping topics). Our acquisitions budget is small and our monographic purchasing is tiny, so liaisons spend more of their time on outreach, assisted and coordinated by an Outreach Librarian. This involves proactively contacting appropriate agency staff about resources and services that may be of interest, teaching webinars or doing on-site presentations, and providing first response to agency specific reference questions. Liaison duties are divided between four librarians in the Information Services section. 

We’ve been following this structure since the dawn of time, or since before I started here anyway. We shift who has what agency whenever we add or lose staff, and our focus has shifted from collection development towards outreach over time.
