This depends on what you mean by 'wiki'.

You could easily make each field/subfield a 'wikified' component.

You could even keep the standard wiki approach and just write a
different interface for the structured data (although this would run
into limitations, since you couldn't fork a particular field).

But don't just write off the idea that 'a wiki wouldn't work'.
