I'm a devoted Tasker user but would not recommend a newcomer to get it just for something like this.  Instead, look into the options for whatever app you're using to record the notes.

What launcher are you using?  Nova allows configuring gestures to run shortcuts: if your app provides a record shortcut, that would get exactly what you're asking for.  Other launchers presumably have similar features.  I'm not familiar with Samsung's launcher.

Can you create a widget for it?  Again, how to do this will depend on your launcher, but try long-pressing the homescreen to get started.  The Recorder app built into my Pixel doesn't offer widgets, but Samsung will have a different default that might, or you can look into a 3rd-party app.

Or try the Quick Settings Panel -- Pixel's Recorder app offers a tile to start recording.  Swipe down from the top of your screen with two fingers to see the tiles and look for an edit/pencil/3-dots menu to configure the options.

Or simply look into getting a different app.  You may not be able to get a one-touch option, but should at least be able two get down to two: one to open the app and one to record.

Do you use an assistant?  I'm not at all familiar with any of them, but this sounds like something Bixby or Google Assistant should be able to do.

Any of these options will be simpler than Tasker.  And even with Tasker, a lot will depend on what the recording app offers.

My Sasmung requires about 4 steps I don't always recall if I don't
perform the task regularly, namel to audio record my notes to myself.

Iphones offer Action so with 1 swipe you can activate audio recording.

button is third-party automation apps like MacroDroid or the more
advanced Tasker, which allow you to customize various button presses
(such as volume keys) to launch apps or perform custom functions."

Have any of the 'droid users enjoyed either MacroDroid or Tasker to
activate audio recording with just 1 swipe?
